What is mountain cheese?
Mountain cheese is a collective term for cheeses from mountain regions such as the Alps. It is usually a hard or semi-hard cheese with few or no holes and a natural rind. In summer, the cows graze on high-altitude pastures full of herbs and flowers, and you can taste the difference: mountain cheese often has a full, spicy and slightly nutty flavour.
Origin: named after the Mont Vélan mountain
The cheese takes its name from Mont Vélan, a mountain peak over 3,700 metres high on the border between Switzerland and Italy. To the south lies the green Menouve valley. The milk comes from Swiss Brown cows: strong, robust animals that graze on the herb-filled Alpine pastures. Their milk has a fine balance of fat and protein, an ideal base for a flavourful mountain cheese.
Flavour: powerful, aromatic and natural
Mont Vélan has a firm texture and a powerful, full flavour with spicy notes from the Alpine pastures. Thanks to its 50+ fat content, the cheese still feels smooth and full-bodied in the mouth. Highly recommended for anyone who enjoys distinctive Swiss cheese.
How to enjoy this Swiss cheese

- In a homemade Swiss cheese fondue, where it adds extra depth of flavour
- Grated over a casserole, gratin or soup
- On a slice of hearty bread or in a toasted sandwich

Made from thermised milk
In addition to raw-milk and pasteurised cheeses, there are also thermised cheeses, and Mont Vélan is one example. During thermisation, the milk is heated briefly, but not as intensely as during pasteurisation. This preserves more of the original flavour of the Alpine milk. The cheese is made with animal rennet and is therefore not suitable for vegetarians.

Frequently Asked Questions
Do you cut the cheese yourselves?
Yes, we cut all the cheeses ourselves—and only when the order comes in. That way, they’re always fresh.
Can you ship cheese?
Yes, our cheese is vacuum-packed by default and can withstand quite a bit.
How can I keep cheese fresh for as long as possible?
Take the vacuum-packed cheese out of the refrigerator one hour before consumption and allow it to come to room temperature. Once the cheese is at room temperature, open the packaging and discard it. After (partially) consuming the cheese, wrap it in the provided cheese paper. Then refrigerate the cheese again. Once the cheese has been finished, discard the cheese paper to prevent cross-contamination.
Is your cheese lactose-free?
Yes and no. Some cheeses contain lactose and others do not. The entire Weydeland range is lactose-free and can therefore be eaten by people with lactose intolerance. Do you have questions about which cheeses contain lactose? Then please contact us!
Where does your hard cheese come from?
Our hard cheese comes from the Netherlands (Beemster), France, Switzerland and Italy. We import the Parmesan cheese ourselves directly from the farmer.
