What is low-fat cheese?
Low-fat cheese is cheese with less fat than regular full-fat 48+ cheese. The number on the cheese, such as 20+, 30+, 35+ or 48+, represents the percentage of fat in the dry matter: the part of the cheese without water. Because cheese also contains water, there is less fat per 100 grams than the number suggests. A 35+ cheese therefore does not consist of 35% fat.
How much less fat is in light cheese?
This is what it looks like in practice, per 100 grams:

What is the tastiest low-fat cheese?
That mainly depends on the aging: the longer a cheese ages, the fuller and spicier it tastes. If you like it soft and creamy, choose young 35+ or 20+. If you want more character, try the 35+ Extra Mature. Tip: take the cheese out of the refrigerator half an hour before eating, then the flavor will come out best.
