What is Tête de Moine?
Tête de Moine is a semi-hard Swiss cheese made from raw cow's milk that you do not cut, but shave into curls with a cheese plane. By rotating the top of the cheese, you shave off thin layers that naturally curl into rosettes. At Kaas & Borrelz, the cheese is available whole or halved.
Shaving with the cheese plane
- Place the cheese on the cheese plane
- Using a rotating motion, shave off thin layers
- The cheese forms paper-thin curls that roll into rosettes
Shaving allows air to reach the cheese, enhancing its aroma and flavour.
Flavour and experience
- Full-bodied and aromatic
- Slightly piquant and spicy
- Light rosettes that melt on the tongue
Perfect for
- Luxury cheese board
- Table presentation with a wow factor
- Drinks with wine or sparkling wine
- Salads and refined dishes

Frequently Asked Questions
Do you cut the cheese yourselves?
Yes, we cut all the cheeses ourselves—and only when the order comes in. That way, they’re always fresh.
Can you ship cheese?
Yes, our cheese is vacuum-packed by default and can withstand quite a bit.
How can I keep cheese fresh for as long as possible?
Take the vacuum-packed cheese out of the refrigerator one hour before consumption and allow it to come to room temperature. Once the cheese is at room temperature, open the packaging and discard it. After (partially) consuming the cheese, wrap it in the provided cheese paper. Then refrigerate the cheese again. Once the cheese has been finished, discard the cheese paper to prevent cross-contamination.
Is your cheese lactose-free?
Yes and no. Some cheeses contain lactose and others do not. The entire Weydeland range is lactose-free and can therefore be eaten by people with lactose intolerance. Do you have questions about which cheeses contain lactose? Then please contact us!
Where does your hard cheese come from?
Our hard cheese comes from the Netherlands (Beemster), France, Switzerland and Italy. We import the Parmesan cheese ourselves directly from the farmer.
