Bon Repas: soft Dutch Swiss cheese with a creamy taste
Bon Repas is a Dutch Swiss cheese with a soft, creamy texture and a slightly sweet taste. This farmhouse cheese is made from thermized cow's milk and is known for its mild, approachable character and distinctive holes.
What is Bon Repas cheese?
Bon Repas is made by the Van Erk family and aged at Treur Kaas in Woerden. During the aging process, the holes are formed by propionic acid bacteria, which create an airy texture and a soft, full flavor. The cheese ages for a total of approximately 8 weeks, with a short warm aging phase during which the holes ('eyes') are formed.

Is farmhouse cheese made from raw milk?
Many farmhouse cheeses are made from raw milk, but also from pasteurized milk. Therefore, always check the product information of the cheese you choose.
How do you best store farmhouse cheese?
Store farmhouse cheese in cheese paper or parchment paper in the vegetable drawer of the refrigerator. This will keep the cheese fresh for longer and preserve its flavor and texture.
What does farmhouse cheese pair well with?
Farmhouse cheese is delicious on bread, in a toasted sandwich or on a snack platter. Its rich flavour also shines in salads, casseroles or grated over pasta.
