Quesadilla recipe with cheese, bacon, mushrooms and tomato
A good quesadilla is crispy on the outside and all about one thing on the inside: deliciously melted cheese. In this recipe, we fill the tortillas with Weydeland 48+ Young Gouda, crispy bacon, mushrooms, fresh tomato and burrito seasoning. Ready in fifteen minutes and perfect as a lunch, quick dinner or cut into wedges as a snack.
Ingredients (1 large quesadilla, lunch for 2)
- 2 tortillas
- 50 g grated Weydeland 48+ Young Gouda
- 30 g bacon (approx. 3 slices)
- 50 g mushrooms
- 2 tomatoes
- 1 tbsp burrito seasoning
To serve: guacamole, salsa or sour cream.
How to make a quesadilla
- Prepare the ingredients. Chop the mushrooms into small pieces and the tomatoes into cubes. Grate the cheese if you are using a block.
- Cook the filling. Fry the bacon in a frying pan over medium heat. Add the mushrooms and cook for another 2 minutes. Stir in the tomato and burrito seasoning, then add the cheese. Stir until the cheese has melted and turn off the heat.
- Warm the tortilla. Place one tortilla in a second, dry frying pan over medium heat. As soon as it is warm and releases from the pan, spread the filling over it.
- Cover. Place the second tortilla on top and press down gently. Cook until the bottom is golden brown and crispy.
- Turn the quesadilla over. Slide it onto a plate, place the pan upside down on top and turn it over in one motion. Cook until the other side is also golden brown.
- Cut and serve. Cut the quesadilla into wedges and serve with guacamole or salsa.
Which cheese is best for a quesadilla?
You want a cheese that melts smoothly and stays creamy. Young and young matured cheeses are ideal. For more flavour, you can replace part of it with Weydeland 48+ Matured Gouda, and for a Mexican kick, add Villa Jalapeño spicy cheese.
Variations
- Chicken quesadilla: replace the bacon with strips of fried chicken fillet.
- Vegetarian quesadilla: leave out the bacon and add black beans, corn and bell pepper.
- Minced meat quesadilla: use seasoned minced beef, just like in our burrito recipe.
Frequently asked questions
Can you make a quesadilla in the oven?
Yes. Place the filled quesadillas on a baking tray lined with baking paper and bake for 10 to 12 minutes at 200 °C. They will be slightly less crispy than when cooked in a pan, but this makes it easy to cook several at once.
Do you need to put oil in the pan?
No, a dry pan is enough. This makes the tortilla crispy instead of greasy. For extra colour, brush the outside thinly with a little butter.
Recipe: Weydeland.
