De Vos family business
Theo de Vos, together with his two brothers, took over the farm in Lopik from his parents in the early eighties. His father always milked the cows and his mother prepared the cheese. Theo learned the trade of cheese making from his mother.
Farmer's cheese with herbs
The cheese made by the De Vos family are the tastiest farm cheeses with additives. Making these farmer's herb cheeses is really a craft in itself. The herbs are first pre-cooked. It is important that the dried herbs are saturated with water, otherwise they would absorb moisture from the cheese, while farmer's cheese should be nice and creamy!
