Which is further enhanced by umami. If you put that in liquorice, Klepper Sr. reasoned, it could produce a very nice, spicy, salty liquorice.
Apart from the delicious spicy salty umami taste, seaweed also has other nice properties. It is a good source of iron and proteins. And it is packed with minerals such as phosphorus, calcium and iodine. Not that you notice anything when you eat a licorice (the quantities are too small for that), but the idea alone makes you feel healthier.
And seaweed is also good for the environment. Provided you harvest it responsibly. Because what trees do above the water, seaweed does underwater: remove CO2 from the water. And when seaweed removes CO2 from the water, the water can again absorb CO2 from the air. So that there is less CO2 in the atmosphere.
