In September, the cows graze on the last of the summer grass. That grass gives the milk a rich, full flavour that can still be tasted in the cheese after a year of maturing. In this way, every Oude September Kaas is a little piece of the late summer of the previous year.\u003c\/p\u003e\n\u003ch2\u003eMade on the Van Erk family farm\u003c\/h2\u003e\n\u003cp\u003eThe cheese is made by the Van Erk cheesemaking family in Berkenwoude, in the Groene Hart. They make artisanal cheese from the milk of their own cows. The milk is \u003cstrong\u003ethermised\u003c\/strong\u003e: a mild heat treatment that is less intensive than pasteurisation. This preserves much of the characteristic farmhouse flavour.
