Weydeland Grass Cheese is made from the first milk of cows that return to the spring pasture after a long winter indoors. That moment – often celebrated with a joyful “cow dance” – is a sight to behold: cows happily leap into the fields, full of excitement for the fresh, lush grass.
That young spring grass is exactly what makes this cheese so special. It's naturally rich in carotene and vitamins, giving the cheese its distinctive golden-yellow color. Plus, the milk is higher in softer fats, resulting in a cheese that is not only extra creamy and flavourful, but also nutrient-rich, thanks to its high content of polyunsaturated fatty acids.
