Lees meerComté cheese is a renowned French AOP cheese from the Jura region. This raw milk hard cheese is traditionally made and aged for at least 4 months, giving it a rich, nutty flavor with subtle fruity notes. The longer it matures, the more intense and complex its aroma becomes.
Comté has been produced in the Jura mountains since the 12th century. Local farmers joined forces to create large cheese wheels that could be stored for long periods. This traditional method is still used today in local cheese dairies, known as fruitières, where milk from Montbéliarde and Simmental cows is transformed into this iconic cheese.
