    Hard cheeses are cheeses that have been aged for a longer period, which gives them a firmer, often crumbly texture and an intense, concentrated flavour. They are usually made from cow’s milk, but can also be made from sheep’s or goat’s milk.

    What are salt crystals?

Pecorino Romano is made from sheep’s milk, has a sharp, salty flavour, and crumbly texture, with a shorter maturation period of 8-12 months. Parmesan cheese, made from cow's milk, has a nuttier and subtler taste, with a maturation period of at least 12 months and a slightly softer texture. Pecorino is stronger and saltier, while Parmesan is more complex and versatile in dishes.

    What is curly cheese?

    Curly cheese is cheese that you can curl decoratively. This is of course about the Tête de Moine cheese, which you combine with a Boska cheese curler to make nice, decorative curls. This looks nice on the snack board. An additional advantage is that the cheese curls come into contact with more oxygen, which gives the cheese a more aromatic taste.

    Weydeland Rijck is also a hard cheese. Due to its very long maturation period of at least 2 years, the cheese has become hard in texture. This makes it crumble nicely and is packed with salt crystals.

    How do you ship hard cheese?

    We cut to order. This means it is always fresh. We then vacuum-seal the hard cheese so that it can be shipped safely. Of course, free cheese paper is always included. That's so nice!
